Sweet, Creamy & Delicious.... Creamy Coconut Popsicles. This recipe makes about 12-15 Popsicles depending on your molds.
You'll need:
1 can of coconut milk (I used Thai kitchen organic)
1 can of reg sized condensed milk
½ cup Almond or Coconut milk
¼ cup heavy cream
1 teaspoon vanilla extract
¾ cup shredded unsweetened coconut
1. Blend ingredients together.
2. Pour into Popsicle molds and freeze for about 5 hrs.
3. Enjoy!
I was just about to look for creamy coconut popsicle recipes. I'm tired of paying so much at the grocery store. I'm looking forward to trying your recipe :)

ReplyDeleteThis looks so good, thanks for posting it up! :) I have one question though, you mention coconut milk twice, so do I put in 1 and 1/2 cup coconut milk into the blender or just 1 cup?
ReplyDeleteThe ½ cup Coconut milk is just an option if you don't want to use almond milk. so yes, you'd add more. :)I hope that clarifies it.
